Put 4lb apples washed and cut into quarters(core and seeds and all) in a large pan with 16fl oz cider. Bring to the boil and simmer till soft. Puree through a fine sieve then measure amount. For every 8fl oz of puree add 4oz sugar. Then add 2 tsp cinnamon, 1/2 tsp allspice and 1 tsp ground cloves.Add rind and juice of one lemon . Slowly cook stirring till sugar has dissolved then quickly bring to the boil and boil till when you drop a bit on a cold saucer it sort of stays in one place I don't think it sets as much as jam.. Pot into warm sterilised jars and cover.
I've found a nice cake recipe that uses it but I haven't road tested that yet.....Last edited by binley100; 29-09-2010, 09:55 AM.

Probably, never made it before but my recipe book (Margaritte Patten one) had recipes for various fruits and it sounded interesting and worth a try. Could you use it as a cake filling? Plain sponge type with the apple butter spread in the middle?

Never had apple butter but have made some apple cheese this year (I know this doesn't really help) which I'm hoping will be nice.

Basically apple butter is like apple jelly with the pulp in, but you can add flavour things if you want. If you use less sugar and boil it longer you get apple cheese, which sets in a mould and can be turned out. The equivalent made with quince is starting to appear in some shops, but we've been buying it in Spain for ages, makes a good accompaniment to the Spanish-type cheeses.
I would think the spiced apple butter might be good with strong cheese, or cold-roast meat.

Apple butter..
I have spent a bit of time making apple butter..........Seemed like a good way of using up my excess of apples. Just tasted it and it's not quite my cup of tea. Any ideas as to what I can turn it into . ?Tags: None
