  • Hi SN - I think you need to take the hot syrup mixture off the heat seconds before you whisk in the bicarb - mix fast and pour into moulds asap. I hope Ollie will confirm!

      Problem i found is that once you add the bicarb' it becomes unpourable. That's why I went for the 'oven baked in the moulds' technique.

        I just, for the first time, tried one of the crunchies.
        They're good, the honeycomb is a little too solid, but otherwise they're spot-on!
