  • Chill...Chilli Sauce...mmmmm

    Unfortunately i cant claim this one as my own....i changed the mango for tinned pinnapple and added a spoon full of mango chutney....its very, very good!!!!!!!

    From chiilis galore forum:

    NagaDaddymango Sauce

    1 to 5 ripe naga's finely chopped (seeded optional but best) ( glove time???)
    1 onion finly chopped
    3 cloves of garlic crushed
    1 tin mangos in syrup (chopped and drained)
    250ml cider vinegar
    1 cup of sugar
    juice of 1 lime
    1tsp curry powder
    2 red chillis ie cherry bombs or red habs depends on whats available
    half tsp salt
    2 tsp english mustard

    Method

    1 .First fry onion and garlic untill golden,
    2. Add curry powder and stir fry for a minute.
    3. Next add chopped mangos, lime juice,naga's and red chiilis.
    4. Cook down for 10 mins on a medium low heat,stir to prevent sticking.
    5. Now add vinegar,mustard, sugar,salt and boil for at least 5 mins, or untill a nice sauce consistensy in achieved.(will thicken when cool.)
    6. Now blend untill smooth and pour into steralized bottles.

        I've made Spitfire Sauce - although I increased the amounts as I make slightly larger batches - made another 20 jars last night (plus 20 more jars of Pear Honey)

        Spitfire Sauce
        1 green Bell Pepper
        1 onion
        2 cloves garlic
        150ml vinegar
        1 tsp sugar
        1 tsp salt
        Chillies to taste - the recipe called for between 10 - 30 (!!) but it will depend on how hot you like it and what chilli variety you use. I used a whole pile of cayenne chillies including seeds.

        Roughly chop the veg and add to pan with other ingredients, bring to boil then simmer for 30 mins. Blitz in food processor the pot up in usual way - simples and scrummy - sells really well too

          Thanks so much guys, I've been after a good chili sauce recipe that's simple to make, I'll give them both a go at the weekend.

            I love hot chillis will eat raw birdseye cut into salad I'm always using scotch bonnet chillis as well.

            I tried to grow some chocolate habs this year planted the seeds back in Januarry, sad to say only had 2 chillis on the plant that survived Glad to say they were fantastic taste, nice and fruity and smoky as well, also nice and hot, hot, hot! Pleased to say I saved what few seeds from said chillies! That same silly plant is now in my bathroom as it started to grow again a couple of months ago and now has flowers all over it, not sure if will come to anything tho as some flowers have just fallen off, others appear to be lasting tho

              NagaDaddymango Sauce

              I have printed off this recipe. We love chilli con carne but can never get it hit the spot. Maybe this will reach the parts that others can't reach.

              I thought some of you preservers might like this one. Its a worcestershire sauce. Bit fiddly but worth it,

                WARNING! There is an error in this recipe. The recipe says 3 tablespoons. Much, much too much. I suggest you make your own adjustments.

                      Have made the naga naga. Last year I made mango chutney so instead of tinned mango I used a jar of the chutney. To dream of. Thanks.

                        I made danmon 81's chilli sauce this afternoon, with a few adaptations. Didnt have a lime so I used Jif lemon juice, used Demerara sugar as I had it in and didnt add the mustard. For the chiilies I used Jalapeņo and Anaheim as these are the only type I grew this year, first year chilli growing, I will be growing lots of varieties in 2010. As these are not the hottest of chillies I used a small heap, about 18 I think.

                        Turned out great, a lovely golden colour very reminiscent of the hot sauce I bought in Barbados on holiday. Tastes good too

                          You're welcome....i'd reduce the garlic next time i think.....and the sauce gets better and better...try mixing it with sweetcorn for a relish....
