I managed to get some Italian 00 flour today. The recipe I followed says half and half to strong white. I have started the bigga so tomorrow I will find out if it better than my usual stuff.

I used to make standard british white or brown but since finding this
Ciabbatta (italian Slipper Bread) recipe #29100 we stick to that. However as already mentioned I found one that uses half/half Alimonti 00 and strong and will report back with results.

OO flour is great to make your own pasta. It's much easier than people think.

Ages ago I bought a pasta making thingemebob. It was such a fiddly messy job I gave up. Do you think make your pasta is worthwhile?

Well, it certainly gives a feeling of great achievement, Bren! You just don't have to mind yards of tagliatelle and spaghetti drying over the clothes airer and the backs of chairs for the next 48 hours. It never seems worth getting out the machine - AND cleaning it again - just for enough pasta for one meal.

It's easy enough to do it by hand.
