  • Freezing soup question

    Hello,

    May be a daft question but I have found a HFW recipe for pumpkin soup with cream & gruyere cheese and wondered if it would be ok to freeze? Anyone got any ideas?

        I was hoping someone would back me up with a long winded answer. Now I'm feeling out on a limb...what if I'm wrong and you get some nasty cheese disease

              Freeze it!
              I cant make any cheese jokes as I am poorly and have a head full of cotton wool I cooked lots of soup today and eldest son has just announced he doesnt like any of it!

              That boy can start eating at another hotel, this one only sells soup!

                My soup recipe says you can freeze the soup base without the cream and cheese added and put them in after - but this was celery and stilton...

                  Definitely freeze it.
                  If you freeze it in individual portion sizes you can just put as many as you need in a pan and warm it gently until it melts, then make sure you have heated it through thoroughly before serving.

                  Hold on is it the one wher he makes it in the tiny pumpkins?
                  I'm not sure a frozen pumpkin would be to clever when defrosted.

                    yes it is the one roasted in the pumpkin but i was planning on scooping the mix out of the pumpkin & either freezing it as is or wizzing it up first. Not sure how the wizzing would work with the cheese though!

                      butternut soup does NOT freeze well but then the recipe we use has milk in it. I would say to keep the cream and the cheese out and add on reheat.
                      Never test the depth of the water with both feet

                      The only reason people get lost in thought is because it's unfamiliar territory....

                        Does soup with milk not freeze well? Cos I have a vat of parsnip soup to freeze!!!

                          sorry Fi but if the butternut soup is anything to go by then the answer would be no... sorry. You've nothing to lose though if the soup is already cooked now then have you?

                            Freeze it anyway, just make sure you reheat gently and stir or whip during re-heating.
