  • hazelnuts.

There's a hazelnut tree at the back of my house and I have had a bucket full of nuts from it.
Trouble is, I don't know what to do with them.
    Anyone got any ideas?

Torrone! Italian/Sicilian nougat. Many recipes out there but a particularly good one on Epicurean.com

You could deffo give that away at Christmas as Secret Santa (please please let Bramble be my SS if torrone's involved).

The locals here put them in Calvados ( apple brandy)
I've got one jar on the go so far...takes flipping ages to shell them!!!

As mentioned under walnuts, ground hazelnuts can be substituted for ground almonds in an alternative 'marzipan'. Coffee grinder or just blender. You might get a bit more texture than expected, but not necessarily a bad thing...

I was wondering what to do with mine...I'll try to find the recipe(it's somewhere here) for rum truffles and smother them with crashed hazelnuts rather than dusting in cocoa

thanks to all who posted and gave me some very good ideas.

Nicos, I crack the nuts with my garlic crusher (one nut fits snugly inside) and they break very easily.

You can roast and salt them and store them in jars, lovely!

Bren, I have to say I wouldn't have thought of that idea either but my 5 year old granddaughter was looking in the cutlery drawer to find something to crack them and next thing I know she's cracking them easy as pie.

It will be good to know for next year, because when we were camping the other week there was loads of them but seeing as I couldn't open them up I soon gave up.

There's a recipe in yesterday's Observer for Nigel Slater's whole hazlenut cookies - looks fab. You can probably find it on the website. I thought of you.
