    LOL, that's told me!!, sorry binley100, must have been on a p'tickly high soap box that time, I do get a bit crusadey sometimes, courgettes are a favourite of mine and so many people spoil them, even professional chefs!!, I have worked with some who shouldn't be allowed near fresh produce!!. off to the norty step to reflect on my behaviour now. (shuffles off, head hung in shame)

      I think it may be the carbonated water that helps, Quinine can have the opposite effect!! including cramps, diahorea, tinitus, and blindness!!! in extreme reactions!!.

        courgette and pea soup. Fry off courgettes, onion, in olive oil till cooked add a handful of frozen peas and a little mint add vedg stock cube and water blitz. sorry cant tell you quantities as I never use them. I have been freezing mine ready for the winter.

              Try a mixed veg soup, but where most of the veg are courgettes, along the lines of

              Fry onions in oil and marg till they're just turning brown; add chopped courgettes and a few chopped carrots, a can of tomatoes, veg stock and water, and a small amount of any other veg you fancy, pepper, mixed herbs
              Simmer till the carrots are soft, then puree with a hand blender; stir in some cream and adjust seasoning

                Courgette Burgers and other things

                I slice my courgettes and saute them in olive oil with garlic, also I make burgers with them.

                Grate a courgette and get rid of the excess moisture by either pushing it through a sieve with a ladle or by hand in a muslin bag.

                Add the grated courgette to a bowl with a 500g pack of lean mince with a good pinch of salt, plenty of ground black pepper and some crushed garlic (optional). Combine the ingredients and divide the mixture into six or eight balls, shape into burgers with the flat of your hand and chill before grilling.
