    Orange Shortbread Fingers
    (makes 18)

    115g softened butter
    50g caster sugar (plus a little extra for sprinkling)
    Finely grated rind of 2 oranges
    175g plain flour

    Preheat the oven to 190 C (Gas 5)

    Beat the sugar and butter together until light and fluffy. Mix in the orange rind and then gradually add the flour and form into a dough.

    Roll out on a lightly floured board until about 1cm thick. Cut into fingers, sprinkle over a little extra sugar, prick with a fork and then bake for about 20 mins on a greased baking sheet, until the fingers are a light golden colour.

    We've made these into stars etc, rather than fingers, since its Christmas!

    Mmm, sounds lovely! We took my Daughter out the other weekend to the Garden Center, and she spotted some shortbread (£3 a packet! ), so we told her we'd make some when we got home, which she then did, and sat and ate the lot (about a lb) in one sitting! She's never tried baking before, so guess whats going to be a part of her Yule prezzies this year!

      And then you can encourage her to make all her pressies next year. Espesh when you see the price of nice biscuits and stuff is that high. I am beginning to sound tight-fisted?

        We're making presents this year! Everyone is getting home-made jam, biscuits and either an apple pie or plum crumble for the freezer!

        Besides, its a nicer present, the fact that someone has made something with their hands for you, rather than spending money on a useless present...

          Especially if the intention for it to be a blessing to the recipient is there and it is made in love. Twice as nice.

              Have bought my neice a teenage cook book for christmas this year - she's only 12 but pretty bright and it's aimed around finding things that kids like to eat but are healthy alternatives from real ingredients. A bit gimiky I suppose but if it encourages her now then she'll have the skills for life. She dosen't live with her dad and her mum hasn't got a clue and so she won't learnt it without a bit of help.

              Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

              Which one are you and is it how you want to be?
