    OK ,so now I make my own pasta with egg yolks I seem to be collecting rather a lot of egg whites in the fridge!!

    First of all....do I recall correctly that Nigella froze her egg whites??

    Secondly - what is the average volume of an egg white??? I've lost count as to how many I've used now, so I need to know if a recipe says 2 egg whites, I put the right amount in!

    Lastly ( here's the fun bit)....other than merangues and souffles what else can be made with them??

        Hello Nicos, you can use your spare egg whites to make the best baked potatoes ever.

        Bake the potatoes in the usual way
        Slice a lid off them along the long side
        Uing a spoon, scoop all the potato out into a bowl
        Mash them with butter, cream, salt and pepper
        Whisk the egg whites as for meringue (1 egg white per 2 potatoes)
        Add the egg white to the potatoes and just fold it through with a metal spoon
        Return the mixture to the potato skins and bake for about 15 minutes until the potatoes have souffled up out of the skins
        Serve IMMEDIATELY before the souffle collapses.
        ENJOY.

            I freeze my egg whites in 2's a la Nigella - old clean yogurts pots wrapped in a couple of layers of clingwrap keeps them intact

              How about using them to make a proper chocolate mousse to make Edwina's hair curl (ie raw eggs)?

                            I freeze egg whites in ice cube trays, one to a block and then use them to make pavlovas or meringues.

                              Like the idea of that blackkitty - thats exactly what I do with blackberry juice too- and put it in a bag with loads of others- saves on plastic!
                              So- one cube is roughly one egg white then??
                              Never said that on Nick's posting!!!!
