    I'm looking for a recipe for a moist carrot cake - I've lost my recipe. Any well tried and tested recipes?

    Hi Frostyfreckle. I don't know if this will be any help, but some time ago I found a good recipe site. It was called http://www.cdkitchen.com/ give it a try, you might find what your looking for.

        Hi Andrew many thanks for the link - there are lots of carrot cake recipes, so will just try a few and see what I like. Catgardener - I think it was a Mary Berry receipe I used so will Google and see what I can find. Many thanks

              My OH bakes this one and I really enjoy it!

              Carrot Cake with Cream Cheese Icing

              3 eggs
              275mls sugar
              250ml's sunflower oil
              5ml Bicarbonate of Soda
              10ml Baking Powder
              7ml Ground Cinnamon
              5ml Ground Nutmge
              Pinch ground cloves
              4 med carrots coarsely grated
              250ml seedles raisons
              125ml Chopped Walnuts

              Icing
              750ml sifted Icing sugar
              50ml soft Butter
              +/- 1/3rd tub cream cheese
              2ml vanilla Extract

              Beat eggs and sugar until pale, then beat in oil. Sift dry ingedients and add. Mix wel, then add carrots, raisins and walnuts. Line baseof 18 x 18 cm sqaure tinwith greaseproof paper and oil lightly. Pour in cake mixture, which will be thickish and tacky. Spread evenly, and make a small depression in the centre. Bake at 160 deg C for 1H15mins or until firm and brown. Stand for5 minutes before turning out onto rack. Remove paper then Ice when cold.

              Using a wooden spoon, mix icing sugar and butter. Slowly beat in just enough cream cheese to give a spreading consistency. Add Vanilla extract. Turn cake right side up and ice the top and the sides.

              As with most oil based cakes,they stay moist for longer and usually taste the best a day or 2 later.
              Never test the depth of the water with both feet

                  This is my fave Carrot cake recipe I've been using it for nearly 30 years. It's based on a 1970's 'Family Circle' recipe.

                  Carrot and sultana brack

                  8oz raisins/sultanas
                  8oz grated carrot
                  5tbsp hot tea
                  8oz light brown sugar
                  8oz SR flour
                  2 eggs
                  ½tsp ground cinnamon

                  Place fruit in bowl pour over tea leave to stand at least 1 hour.
                  Stir in sugar, flour, spice and eggs.
                  Mix well
                  Spoon into 2 greased 1lb loaf tins
                  level top and cook for 1 hour at 350f, 180c or gas 4 for 40 to 45 mins.
                  Turn out and cool.
                  Location....East Midlands.

                      This is my favourite recipe...

                      Carrot & Pineapple Cake


                      2 cups plain flour*
                      2 cups brown sugar*
                      ¾ cup vegetable oil*
                      2 tsp baking powder*
                      2 tsp cinnamon*
                      2 tsp nutmeg*
                      1 tsp salt*
                      2 cups grated carrots
                      2 large eggs
                      ½ cup sultanas
                      ½ cup chopped nuts
                      Small tin pineapple cubes


                      Mix all the starred ingredients in a bowl – slow speed using a blender.

                      Break eggs and mix in well one at a time.

                      Add everything else.

                      Put in a 7” cake tin (lined) and bake in the oven 370°F for 1-1½ hours.

                      It is a moist cake.
