  • Quick butternut squash

    We had roast beef and Yorkshire pudding for Sunday roast.
    I picked a half length butternut squash that came from a saved seed plant and we had it boiled with a pinch of salt instead of carrots.
    It was perfectly good next to beef and was like a sort of sweet potato.

    That sounds good. The first time I ever tried butternut squash they were on offer in the supermarket and I was thinking of buying one. I waited until another shopper picked one up and put it in her trolley and then asked her if she minded telling me what you could do with them. Her answer was pretty much anything you can do with a potato. I tried one and planted my own the following year. My favourite way of cooking is dice them into ½inch cubes, drizzle with oil, sprinkle with thyme and bung in the oven for a good half hour. Sometimes I then take them out, put some small cubes of blue cheese over the top and put them back for 5 minutes.

      Last time I did them in the oven I scooped the seeds out and filled the space with chopped onion and drizzled them with a mixture of melted butter mustard, nutmeg and cinnamon.
      I dished it out from the shell.
