  • Cape goosberry compot

I attempted to make jam from the fruits but it ended up as a compot, if anyone else is doing this then make sure that you use plenty of pectin (they have none) and unless you like fruity lump jams (the fruits don't breakdown during cooking) that you either chop the fruits up before you start or liquidise when the cooking is finished.

We made some excellent jelly from our gooseberrys in june, just added a few elderflower heads, for flavour, and a couple of lemons, for flavour and pectin. we make jelly 'cos the kids dont like lumps but the fruit broke down very well during cooking and OH and myself ate the pulp with cream. when did you try to make jam? if your in cheshire try next year to make it june or july.
    good luck
