I use a recipe very similar to Zazen but with acetic acid(1Tbs vinegar per lb flour and 1tsp milk powder) vegetable shortening is very good in bread making, around 1/2 per lb flour instead of olive oil, your basic bread recipe can be made into ciabatta, simply add 2tbs olive oil and 2tbs water to a finished dough and remix, weigh at 5 oz and pat/pull out to 3x8" with plenty of flour(do not mould shapes!) prove to double and bakeat 250C till just coloured, for foccacia omit water, mould round and roll out oval shapes, brush with olive oil and dot with rosemary and 1/2 cherry toms, prove and bake 250 till coloured.
Eat well, live well, drink moderately and be happy (hic!)

Yes, bread machine ok. Kenwood mixed, lighter & tastier.
