        I got confuddled cos the OP said to let it cool..................and, well cos I am a bit carp at this stuff

          Nope, beetroot will be fine - the acid of the vinegar is all the preserving agent they need.

                  Thanks, I just saw Alice post on facebook saying the red onions were cheap in Lidl again, so will pop over today and grab some!

                      Got a load on just now but was about 90grams short of sugar, will it be ok dont want it too sweet but could but some honey in?? really want it for goats cheese tarts but i've made lots!

                      PS Heavy with balsamic ;-0

                          Like the sound of the red onion marmalade will give it a try over the weekend, still have loads of red onions left. Have just made some Caramalised red onion chutney which tastes great! anyone want the recipe follow this link- Make Caramelised Onion Chutney - Preserving

                            Thanks for the reminder of this thread - I made some last year and now have friends who want a repeat order! Also red onions are in my local s'market - on the plot they don't do too well.

                              Would think it should be OK, probably won't thicken as readily, but once it does, sugar content should be enough to preserve (as far as that is needed)....
                              Flowers come in too many colours to see the world in black-and-white.

                                Honey burns very easily but you can substitute 10 - 15 % of the sugar content with honey and add it after the sugar has dissolved.
