  • Onions with a kick

    Hi,
    My shallots and onions are nearly ready to come up. My sister has asked for her jar of pickles have a bit of a kick to it.
    So was wondering what do you suggest?
    Is it best using dried or fresh ingredients to spice them up?

    I give some of my shallots to my sister and get a jar back. She adds fresh chillies to hers chopped very finely.

      I always put dried chillies (as well as other pickling spices like coriander seeds, peppercorns mustard seeds) in my pickles. Himself loves them.

        Hi

        having just spent the past two weeks in Mexico I can certainly recommend chillis and the more the hotter you get it.

        I use whole chilli and pin prick them so also eat them also when. They are ready

          I just lob a whole fresh chilli on top of the onions in the jar before the vinegar,gives them a nice zing
          don't be afraid to innovate and try new things
          remember.........only the dead fish go with the flow

            I use a mix of six scoops of compost three scoops of sand/grit and two scoops of perlite,the quantity is unimportant as long as the ratio is the same, if for seeds I use this mix, if I am potting on I add some blood, fish and bone, along with a small quantity of chicken manure pellets
