Frozen cheese goes nice and crumbly though on defrosting, so you probably don't need to bother grating it.

I've had cheese in the fridge that is way past it's sell by date and there is nothing wrong with it so maybe you don't need to freeze all of it?

If you have a big piece of cheese it can be worth cutting it up and freezing it in sensible size pieces.

Whilst it will keep ages and ages in the fridge each time you take it out and handle it you're potentially covering it in bacteria.

We have had cheese in the fridge for weeks unopened & I don't usually look at use by dates & even if opened if it has mould on it I just cut the mould off.
It hasn't done me any harm.................................................YET

The river Trent is lovely, I know because I have walked on it for 18 years.

It's not just handling it that increases the bacteria: the bacteria already on the cheese will start replicating at room temp

3-6 months I'd guess. Or until it's eaten, whichever is sooner.

And I'd still eat it after many years, if it smelled ok.

Apart from cheese I've also got a bag of parm butts (Parmesan rinds) in the bottom of my freezer they're handy for adding to soups and sauces.

Yes you can freeze cheese, hard cheese preferably, when its unthawed it's more 'crumbly', but fine or cooking.
