  • Freezing Tomatoes?

    I grow tomatoes only for cooking with (none of us are fussed on the taste of 'raw' tomato...) and have in previous years made up pasta sauces with other veges etc and frozen them in portions.

    This year I thought it'd be more versatile to freeze the tomatoes as 'chopped tomatoes' so that I can use them for bolognaise, chilli.... ..... ....

    Do I just rough chop them, open freeze and then bag them up or is there moreto it than that? Also, is it okay to add garlic and mixed herbs to some too or would freezing destroy the flavour rather than marinade it?

    I usually peel them (pour boiling water over and leave for a minute or two) then freeze in boxes big enough for suitable portions (only you know that!). Sometimes I cook them with onions and then portion them up. So basically, yes, go ahead!

      I just freeze them whole or cut in half and then open freeze prior to bagging up. Found the cherry ones very nice in winter quiche type things as well as in sauces. Acutally discovered a stray bag from last year only the other day, must get more organised in the freezer!

      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

            is peeling them important before freezing?
            if i use real tomatoes (rather than tinned) in a sauce, i use them with the skin ......
            and the less hassle it is to freeze things, the more i'll grow

              It's not important to peel them. I like them without the peel in cooked dishes. Otherwise Himself oiks the stuff out and leaves it on the side of his plate.
