  • Runner bean pickle recipe wanted, please

    Does anyone have a recipe for pickling runner beans that doesn’t involve mustard and turmeric? Not that I don’t like the piccalilli type - it’s just that I’ve got gallons of it already! What I’m really looking for is a recipe that allows me to use the pickled beans more as a vegetable than a relish.

    I had no success with the old-fashioned 'salting' technique, but it is supposed to work (my first try didn't work due to unsuitable container, never got round to trying again). Layers of sliced beans and salt (can't remember the proportions, should be in Seymour's books, among others) in a sealable 'pot' and air excluded as much as possible, is all I can remember. I know once required they are supposed to be washed thoroughly (to remove the salt) and then cooked 'as normal', but a bit longer.
    Flowers come in too many colours to see the world in black-and-white.
