    1st racking just done. Lots of sediment in the bottom of DJ.
    The wine is flourescent pink, nice & clear, and tastes very much of beetroot. Fizzy beetroot. Hmmm _ let's hope that time mellows it a bit.
    SG: 0092, so fermentation is just about finished I'd say.

      3rd rack today.
      It's finally losing its beety taste, thank goodness. I think it needs to stay in the DJ for a while yet though.

            specific gravity thing !!

            Hi Two sheds.
            Should make a nice rose wine.
            So the thing about specific gravity is it measures the thichness of the liquid. Water is 1.0, add sugar to make a syrup which is thicker than water and the hygrometer, a glass bulb with a depth gauge, floats higher. As the sugar converts to alcohol the liquid becomes thinner. Take the first and last reading which will be less than water and you can find out what alcohol by volume you have created.

              I've got a bed of small beetroots ready to pick and have enough of the other stuff i want - could i use these?
