| Nah...don't freeze them or they'll be there this time next year!! | I sould think you could make gooseberry cheese. Make it with the same ingredients as jam but slowly boil the gooseberries with water until soft, press through a sieve then put back in the pan with the sugar and continue as for jam. I made a strawberry cheese like this 'cause my daughter doesn't like the bits.
