    Don't know if this is the right forum, but does anyone know how to make cheese?

    I've only made soft cheese - like a cream cheese. You can make this without rennet or rennet substitute. For the rope sandal brigade as old as me, you can 'rennet' a cheese with nettle juice. Basically you have to let a quantity of milk go sour. Then strain it through very fine muslin - don't squeeze it, let it drip overnight. At this point I have salivated enough and completely lost patience, added salt and chopped chives and tucked in. You would have to press it to make a harder cheese. Might require specialist equipment. Maybe someone on here has actually done it professionally and can be a bit more help.

      Ascott Smallholding sell a bit of cheesemaking equipment, was thinking of having a go, but not quite got round to it yet...
