    Does anyone have any good suggestions of things to do with cucumber? My OH and I have just about overdosed on it raw and there is only so much soup you can eat, so any other ideas would be great.

        A family favourite in the Grief house is Cucumber & Onion sliced up & soaked in ordinary Malt Vinegar - hmmmmmm soaky onion & cheese sangers

          no, no, no to malt vinegar except on chips...after the summer you'll have made your raspberry vinegar (leave them in white wine vinegar for a fortnight, strain, done).

          So, dice then salt your cucumber, rinse, add a little raspberry vinegar (sherry is second best, cider or white wine will do) and some cream, hey presto, cucumber salad. Once you get bored with that add some fresh herbs, dill or mint both sound good. Chives, oregano would work.

              You could make tzakiki (probably spelt wrong), strained cucumber, garlic, greek yoghurt and mint.

                Delia does a recipe for Sweet Pickled Cucumber Slices in her Summer Collection, which you could get the recipe from www.deliaonline.co.uk.

                We make is most years, and it keeps for several months, ie you can be eating home grown cucumber at Christmas! That is, if you're not still tired of them!!

                  Caroline - what cucumber did you grow to have so many? I didn't have much luck this year. The five cucumbers I got from six plants were treated like royalty!

                    Jennie, I did 5 plants (outside) of the Burpless Tasty Green (also not expecting many fruit) and they have been fantastic. Really tasty and pretty productive (though a friends variety have been far more so - still trying to find out what he had ) so I would highly recommend them.
