  • Hawthorn Jelly (savoury)

    1.5lbs of hawthorn berries* (Try & pick sweet ones, not any that taste of nothing)
    up to 2pts of water (you may need a bit more or less, depending on how juice the berries are)
    sugar
    1 lemon, juiced (if jelly doesn't set readily)


    Simmer haws in water for about an hour, pressing with a potato masher now and again.

    Strain in a muslin bag overnight (do not squeeze the bag)

    Measure the juice -for every 1 pint of juice measure out 1lb of sugar. Heat the juice. Bring to the boil, then stirring continuously add the sugar. Keep stirring until sugar has dissolved.

    Now boil it rapidly until setting point is reached. You may want to add lemon juice if it doesn't.



    It's a nice change to cranberry sauce

    *you could try a mix of haws, blackberries & elderberries

    I might add 500g of elderberries and 1kg of crab apples to 2kg of haws. Makes about 8 jars (tbc)

        I have a bottle of mixed hedgerow juice (about 50% crab apple, the rest mixed) in the fridge at the moment waiting for me to aquire more jam jars this evening when it will be converted into a yummy jelly.

        Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

        Which one are you and is it how you want to be?
