  • Fruit Conserve?

    I am looking for a method to preserve different fruits useing less sugar. I want to be able to have fruit in jars that can be used on fruits, ice cream, desserts etc. It does not need to have a setting point like jam but it does need to keep.

    Any ideas how to achieve with blackberries, raspberries, greengage, apples?

    Have you looked into bottling fruit? I remember doing it at school way back. We used Kilner jars, packed the fruit with syrup, and boiled the jars in a water bath for a while. I can't remember details, but the idea was it came out like tinned fruit in syrup, and kept for a long time. I did peaches.

    I just found Pigletwillie's sticky on 'Making the Most', have a look and see if it's any help.

      I am pretty sure that you can make jams using less sugar, but they have to be kept in the freezer. It is the amount of sugar you use which enables jam to be kept at room temperature.
