any onegot any good elerberry wine recipes that dont involve too many chemicals?

no bother found one i like the sound of:
2 kg elderberrys (or combo of elder and blackberrys)
1 kg caster sugar
1 orange zest and juice
1 lemon zest and juice
2 teaspoons bakers yeast
if any ones intrested.Yo an' Bob

Your better using Brewers Yeast Yoanbob a bakers yast will be killed off by the hi alchohol content.

hi YB - take a look in Septs GYO issue - page 32 - Im going to pick some this weekend (if it stops raining!) when I go and pick some blackberries.

Yes me too, have just picked up my first three demijohns from a fellow freecycler. Yippee!!! Only problem. Slight lack of space for my experiments (as pointed out by OH) still shall find a way to solve that one.

What about elderberry port
2 quarts elderberries
1 gallon water
31/4 lbs sugar
4 ozs large raisins
Strip the elderberries from stalk, add the water, bring to the boil and simmer for 15 minutes. Strain and discard the pulp (compst heap!!)Add the raisins to the hot liquid also the sugar and dissolve. Let cool. Ferment to finish. Syphon off and bottle.
This is best kept for a year before drinking - if you can keep your hands off it that long
Although the recipe doesn't use it, I always use a sachet of yeast to start it.
