  • Drying Herbs

    I just put a small herb garden this year. I have never dried herbs before. I just harvested some of my oregano and layed it out on a paper towel to dry. Is there a another way to do this and by laying out the leaves to dry do they lose their freshness and seasoning potency? I have some lovley rosemary and I have no idea how to dry it? Any help would be appreciated.

    well i always use fresh for as long as i can, but do dry for the winter.

    I tie mine in bunches with cotton, and hang them in the kitchen, rosemary does really well like this. when they get really dry I crumble and put in jars with lids, be sure they are really dry though.
    chillies i string and hang too.
    bay leaves i dry flat and then put in a jar.

      We find that drying herbs actually increases their potency. We don't dry either rosemary or bay because they are green all winter straight from the plant and somehow, although the flavour is still there, dried herbs do seem to lose a certain something. We do dry oregano, thyme and sage also chillies using BrideXIII's cotton method. The one we have had no success with is basil. It just won't dry properly and loses that lovely aniseedy flavour. So we freeze that - but it just isn't the same as the fresh.

          Once you've tied them in bunches try hanging them from one of those round, plastic thingies with the pegs that people buy to dry socks on. You can fit loads on one and dry plenty at a time.
