  • Resourceful or just plain mad?

    A couple of friends handed me in some fruit at the weekend.......more than you could carrya ctually and not being one to waste anything i HAD to preserve it; so since sunday i have made:

    Rhubarb, lemon & ginger jam (8 jars)
    Rhubarb & Coriander chutney (6 jars)
    Plumbeena (6 bottles)
    Spiced plum & chilli jelly (7 jars)
    Plum jam (6 jars)
    Apple, bramble & raspberry jelly (7 jars)
    Apple cheese (8 jars)
    apple & cucumber chutney (6 jars)

    and i've still got about 5 kilos of apples left and another 'friend' is handing me in some plums tomorrow......AARRGGHH

    Am i mad??

          Definitely mad - just like the rest of us. I still have preserves in the cupboard from last year and am now making more.

            great to know I'm not alone then!

            at least crimbo is sorted - everyone will be getting hampers!

            and will post recipe tonight - off to take son to the vet

              Is Plumeena like ribena but with plums? If so would be interested in the recipe, please. Oh and another vote for the 'plum & chilli' recipe.

              ps mad is too strong a word!

                any recipes with plums much appreciated here too!!

                And you're not mad. i've made 5 jars of tomato chutney, 3 large boxes of tomato sauce to go in the freezer, 2 jars of dried tomatoes, got some plum jam on the go now and loads more plums, tomatoes and blackberries to pick too. oops


                and we haven't even started on the apples yet....

                        ok everyone that asked for the plum and chilli recipe. it's in a fab book i bought a while ago Good Old-Fashioned James, preserves and chutneys by sara paston-williams. loads of recipes you dont see much nowadays and also some really unusual ones.

                        1.5kg good flavoured plums
                        4 slices of peeled fresh root ginger
                        2 small cinnmon sticks, halved
                        2 star anise
                        300 ml water
                        granulated sugar
                        150 ml cider vinegar
                        3 chillis (i used jalapenos cos i had them!)

                        wash the plums (no need to deseed or chop), pop in pan with ginger spices and water. simmer covered for approx 30 mins till they are soft and pulpy. add the cider vinegar and coook another 5 mins.

                        strain thru a jelly bag. recipe said overnight but i just did a few hours (impatient!)

                        measure the juice and for every 600ml of juice, add 350g - 450g warmed sugar (to taste & varies depending upon sweetness of plums)

                        heat gently in a clean pan, stirring till sugar has dissolved, then add deseed and sliced chillis.

                        boil until setting point is reached (for me it was about 18 minutes i think).

                        skim (I'm too mean and just stirred the scum in!) and pour into warmed, sterilised jars.

                        leave t stand for about 20 mins the stir to distribute chillis evenly. cover.

                        just had some of the left overs and it is really ncie.

                        recipe says good with pates, terrines, roast poultry, esp duck and goose....

                            Can you take the plums to work to share with others. Someone did that at my work today and they were lovely and nearly all eaten by home time.

                              i dont work in an office, i work from home and my 'colleagues' are my horses.....think they'd struggle with the pips! though they do like the apples and the brambles....a bit too much!
