Loads of recipes courtesy of Google. Lots of people recommend the Nigella one, but I like Hugh FW's one from the River Cottage preserves book.

If you are talkiing about the red pepper and chilli jelly, then I agree,

We make it every year and it is absolutely fantastic, but refuses to set solid for some reason.

It becomes more of a dipping sauce than a jam, but still tastes great!

Are you using jam sugar and boiling it to setting point?

Yes, I use jam sugar and boil to setting point. Some batches set and some don't, but even if they don't set they taste yummy.

If you can't get it to set you could try pectin sachets (one sachet sets 1kg of sugar) or some gelatine. We used Nigella's recipe to make our traffic light chilli jam last year. When we did weekend fairs I was up until 2 or 3am making more for the next day having sold it all on the Saturday.
