    Used this recipe today
    Streusel Topped Apple Butter Cake Recipe

    It is very nice even tho' I was rushing and forgot to put the sugar in the batter mix. I think the apple butter was sweet enough not to need it.

    Just to report apple butter is rather nice spread over the base of a mincemeat tart Guess what the added extra in my mince pies will be this year

    I wonder if the type of cider (sweet,dry,lumpy scrumpy or even pear) would have an effect on the taste of the finished product now where is the drunken smiley ?

    They might do. I found the recipe a bit too sweet for me , but crab apples are tarter .

For every 8fl oz of puree add 4oz sugar. Then add 2 tsp cinnamon, 1/2 tsp allspice and 1 tsp ground cloves.Add rind and juice of one lemon . Slowly cook stirring till sugar has dissolved then quickly bring to the boil and boil till when you drop a bit on a cold saucer it sort of stays in one place I don't think it sets as much as jam.. Pot into warm sterilised jars and cover.

    I've found a nice cake recipe that uses it but I haven't road tested that yet.....

    I thought you could keep apple butter in jars like jam, Binley. That's what my mother used to do before she had a freezer. We didn't like the stuff either.

    Am desperately trying to use up the remaining apples before they go over .....freezers already stuffed with them stewed, crumbled and caked ......

    I made some apple butter inthe slow cooker. Its good stirred into porridge! Have just made a bitter apple preserve recipe, which is sweet but with a tartness too it. I too have an apple glut!
