  • Tomato Chutney

    This is the recipe that my Wife uses every year and it is very tasty, especially with Cheese & Crackers!

    1kg/2lb 4oz Ripe tomatoes, peeled and chopped.
    750g/1lb 10oz Cooking apples, peeled, cored and chopped.
    375g/13oz Light muscovado sugar.
    250g/9oz Onion, chopped.
    250g/9oz Raisins.
    1 Green pepper, deseeded and chopped.
    2 tsp Salt.
    1/2 Ground ginger.
    350ml/12fl oz Cider vinegar.

    Put all the ingredients into a large pan and bring to the boil over a medium heat. Stir occasionally until the sugar has dissolved. Boil the mixture, uncovered, for about 45-50 mins until the fruit is tender and thickened. Cool, then transfer the mixture to sterilised jars and seal.

    Makes about 1.5 litres Enjoy!!
