Default veg ripening

Hi,
Could anyone tell me if I can encourage my sweetcorn to ripen quickly as I am guessing I will lose it all once the frosts hit. They are all good strong plants but the sweetcorn cobs are white and not yellow?
Any ideas

To me, white is ripe,yellow is over ripe! Once the tassels have gone brown it can be eaten.......... raw preferably!
If you want to try and let it grow a bit longer you could try putting horticultural fleece over it!
