  • Jerusalem artichoke

So I planted Jerusalem artichoke this year but don't know what I'm supposed to do. They are growing very well and are currently higher than 6ft...

How do I know they are ready to harvest and typically what month would that be?

    Thanks all

Typically it would be the opposite month that I would find them mature. I didn't even dig mine up.

I dig them when the foliage starts to die back. They will keep in the soil for yonks.

Thanks all. Is the idea I should leave half the bounty in the ground for next year?

I think that once you have them, you'll always have them!
