Default Limoncello Trifle...but what fruit do I use??

Okay, so its MIL birthday next weekend, and I said I'd make a trifle for dessert. I like the kind of trifle which is lady fingers/sponge spread with jam in the bottom of the dish, laced with large amounts of sherry, then fruit on top (raspberries, blackberries, blackcurrants etc), then custard, then cream.

Now...we made a big batch of Limoncello before Christmas, and to ring the changes, I thought I'd used that instead of sherry, and lemon curd instead of jam...

but what on earth do I use as the fruit layer??

Gosh- that's had me thinking!!! ( and now I fancy a piece of lemon drizzle cake -which I don't happen to have!!)

Urm- I suppose you could use mandarins as they are fairly sweet but tart and maybe some flaked almonds?
or - red cherries and pecans??

I think creme fraiche and mascapone would work well- what do you think??

Hmmmm, interesting. I was wondering about mascapone instead of cream, it would give it a real Italian feel.

Lemon goes really well with strawberries - especially the anaemic imported ones - and peaches.

Darn- I'm still thinking!!!!

I think of lemon as a refreshing flavour associated with hot weagher. So I suppose tropical fruit should psychologically work well. Mangoes maybe , passion fruit ( crunchy bits) bananas ( no texture and too bland with the rest of the colours??)
That's why I thought of almonds- sort of Italian and gently crunchy to add texture.

Crumbled Amaretto biscuits on the top

Its tricky isn't it - I've been wracking my brains.

Passion fruit and lemon sounds like a lovely combination, however FIL has advanced cancer of the esophagus and can only eat soft stuff - so no crunchy bits

(But I will store that one in my brain for another occasion )

Well then.... I'd go for chopped strawberries, peaches and mangoes. That'd go!
Nice and soft, good mixture of flavours to compliment the lemon and warm, friendly colours!!

( can you post on any left overs..if there is any???)

Saw this recipe in the Waitrose magazine a few months ago & thought it looked delicious.Haven`t made it though so can`t recommend.

mangos are around at the moment raspberries might have too many pips ( thats what my Mum used to say as she got older)
