  • Gooseberry Ideas?

    Well I have just cleared my bush, and have about 2.5 to 3lbs at a guess, any suggestion for use. I love jam but there really isn't enough for this, and the elderflower in our area has already gone over, or been used. I love a tart, but wouldn't want about a freezer load.

    Any other ideas folks?
    I'm only here cos I got on the wrong bus.

    Nah...don't freeze them or they'll be there this time next year!! ( I still have about 10lb from last year in the freezer and need to pick this years crop soon)

    I also intend to make gooseberry jam but in jelly form-ie without the skin and pips.

      At what point do you sieve it, to get rid of the pulp, and do you put this back in, in a muslin cloth?

      Thats a good site, there's a recipe there for chutney which sounds interesting, anyone ever made gooseberry chutney?.

        I sould think you could make gooseberry cheese. Make it with the same ingredients as jam but slowly boil the gooseberries with water until soft, press through a sieve then put back in the pan with the sugar and continue as for jam. I made a strawberry cheese like this 'cause my daughter doesn't like the bits.
