    Sorry if this seems a bit simple. I'm a novice chutney maker that's just managed to get her paws on some free pears...

    When a recipe calls for 1kg of pears, is that before coring and peeling, or after coring and peeling?

    And from a recipe, is it possible to gauge how much I would end up with? Can I work out roughly from the quantities, how many jars I would need?

    If it were me and it doesn't make it clear whether the weight is before or after peeling & coring I'd plump for weight after and risk having a bit extra fruit...I don't suppose it will be that much of a difference? As for number of jars...hmmm I just put extra into the oven to sterilise, as better to have to many done and ready. Not much help sorry...

      I usually go for prepared weight. Specially with windfall fruit you often lose quite bit of weight in preparation. As for number of jars, I would add the total weight of your ingredients and calculate from that. You will lose a bit of weight in cooking, but you should then have enough jars ready. The number of jars also depends of course on the size of the jars. I prefer to use smaller ones, so more jars needed.
