  • using my fathers day present

    For fathers day I was given a pork pie dolly for forming the crust. Well today is try out day. I am going to make a traditional pork one, a pork and chorizo one, plus a stilton topped one!

    I even have pigs trotters to make the jelly with!

    What a thoughtful present. I love pork pie, having a savoury tooth. I haven't made one for years, are you using hot water crust pastry? My mouth is watering.

      I'll be interested in the results PW. My lad (my other son!) makes his own raised pies by hand. They are so much better than the shop ones - even the quality ones. He had a 3 tier pork pie for his 'wedding cake' recently. Pork & chorizo sounds brilliant. I do a pork and chorizo stew when we have a Tapas evening. Fantastic!

        The pork and chorizo does sound good. Make sure you post the recipe if it turns out to be a winner. I make a chorizo & tomato pasta sauce which the kids adore! (and us parents of course!) Its hilarious to see the other parents pulling away at the reek of garlic from the angelic looking 2 year old.

          I make my own pork pies every Christmas, a skill i learnt working as a pork butcher many years ago.
          I would go up into the bakehouse and help the ladies hand raise them, then when cooked and half cooled it was my job to pour the jelly in using a teapot.
          I make large ones for the family and small ones with the left over meat and H/W pastry and freeze them for later in the winter when i cant get out.

                I have some Melton Mowbray pies in the freezer - rare treasure - as Jardinière says us french grapes are deprived! I've tried to make my own, but the filling never has had quite the right flavour. I'd love a tried and tested recipe, please!
