  • Please spare a thought for me today

    MiL forced a 7KG turkey on me cos she bought two (!) - I am now cooking it and looking around the empty unit for many mouths to feed!

    I didn't have a tin big enough, I don't have an oven big enough - it looks like a size 20 in a size 10

    Anyone passing RAF Benson please drop in for turkey....

      hehe - no, not this time, it was bought for large family get-together, but due to FiL situation it was downsized to a crown leaving big 'un for me to deal with

          D'oh...one day too late Piskie!!!

          I can just smell it from here...yum! ( yep- we're back in the land of garlic and cheese!)

          Are you able to freeze some of it with the juices??

            oh I fear I will be freezing much of it

            I found a lovely recipe (and tried it with Christmas Day left-overs) for Spicy Turkey Tortilla(s), was pretty yummy

                'ere ya go - I'll also put it in recipes area Mods

                Ingredients

                1 spray low-fat cooking spray
                1 medium onion(s)
                1 clove garlic
                100 g mushrooms 400 g Tesco Italian Style Mixed Beans
                1 large can canned tomatoes 1 teaspoon chilli powder
                225 g roast turkey
                2 tablespoon fresh coriander 1 pinch salt 1 serving pepper 4 medium soft tortilla(s) 25 g half-fat cheddar cheese

                Instructions
                • Heat a large frying pan and mist it with low fat cooking spray. Add the onion, garlic and mushrooms and sauté them until softened, about 5 minutes.
                • Add the mixed beans, tomatoes and chilli powder to the frying pan. Cook for about 10 more minutes, stirring often, until the liquid has reduced down. Stir in the turkey and coriander. Season.
                • Lay the tortillas onto four heat resistant plates and divide the filling equally between them. Scatter the grated cheese on top and grill for 3-4 minutes until the cheese has melted.

                  Cook's Tip: A home made salsa makes the perfect accompaniment. Just mix together finely chopped red onion, cucumber, tomatoes, coriander or parsley and flavour with lime juice, Tabasco sauce, salt and pepper.

                  I just made 2 turkey pies with the left overs of ours, how about making something like that & freezing it? Could do Turkey Pie, Turkey Curry, Turkey Soup....

                    I deliberately make loads of extra gravy and veg on Christmas day (or any other time I cook turkey). I chop all the leftovers into bite-size bits, cut up lots of turkey similarly, chop up an onion or two, bung the lot into the slow-cooker and cover with leftover gravy - if you only had roast spuds, cut up some salad potatoes and mix the lot together. Cook on low until the spuds are cooked and everything is hot. Serve in yorkshire puddings or with fresh crusty bread. We call it Christmas Casserole in our house and it is one of the most popular meals of the year!

                      Your Christmas casserole sounds very much like my turkey pie filling - turkey, gravy, sausage meat, stuffing, left over veg!
