    Hi,

    Hope this is in the right thread if not then please move

    My mom is making a chocolate sledge for her country market. But she is having a major problem with her chocolate.

    So I said I would ask here as I know a lot of Vine peeps do crafts and baking items

    She made it a few years ago but never had any problems with the chocolate but this time its been a disaster. It has been brittle, if she has heated it more than once it has gone all gritty or it goes white and dull not shiny.

    In the end she has made a mixture of Cadbury's milk chocolate and Dr Oetker 72% dark.
    Its not as thick as usual but she had used just over 260g of chocolate on it.

    This is what it looks like. Its meant to have two reindeer but they wont come out of the moulds properly.



    Has anyone else had this problem or what chocolate do you use?

    She has an ice cream tub full of unusable chocolate that needs chucking.

    I think once the chocolate has split there is nowhere else but the bin. Sorry
    I grow 70% for us and 30% for the snails, then the neighbours eats them

        If I recall, gritty is a sign of overheating.
        As skeggie suggests- I reckon it needed tempering too? ( not that I've ever bothered with doing that for the family )

        Lisa- I have been known to crunch my way through overheated chocolate ...burnt - nah, I was never THAT desperate

            Yes, the chocolate has been overheated. If the chocolate in the moulds isnt burnt you could try putting in the freezer to get them out.
            I'm not sure what your reindeers look like but modelling chocolate maybe an easier option if she wants to try again. I make mine and often mix with fondant to make modelling figures.

              Had you thought of creating something from choc mini rolls,choc marshmellow for the face, choc matchmakers for legs...rolo for feet??

              Bit like a variation on one of these????
