Default Melons- how do you grow them??

Hi. I was given some melon plants earlier in the year which I put in the polytunnel. They have grown on well and are sending out branches all over the place. My questions are a) do they grow horizontally or do they need training up canes and b) should there just be one main stem (like a tomato)left to grow? I was told that the 2 varieties are Galia and watermelon. All help will be greatly appreciated
