Why is my rhubarb still green and so BIG

My plant is now 3 years old, the stalks are huge , I can hardly get my finger and thumb round them , plus they have not gone red so I haven't picked. They produced flowers early on which I removed . My plot neighbour had some of plant last year and his looks great. Advice please as I miss my crumble.

Not all rhubarb turns red - maybe you have a green one Pick a stalk and see what its like
