Keep the heads covered with the leaves, tying the top of the leaves together if need be. Keeping the head in the dark helps stop the plant wanting to bolt. However if the plant decides its time is up then you wont stop it bolting. Good luck.

Check it regularly - and eat it when it looks just right! A day later and it could be too late!

If the florets start to look like tiny open stars - cut it quick! Some types only produce small heads, is that what you've got?

If your cauli is only golfball sized thats it thats all your going to get its no good tying the leaves over it or putting it in a box with ice cubes to suspend the growth thats all you are getting, as FF says just keep an eye on it and cut it as it begins to open, the reason it has gone to flower is the plant has been stressed and the first reaction of a plant that thinks it is going to die is to reproduce all brassica's need lots of water and when you think you have drowned them give them another can.
Try winter cauli's they are much easier.
