  • My Chillis are just beginning to ripen

    My chillis are just beginning to ripen, they have been a very light green for a while now, and have only just sarted to turn from this colour to orange onto a lovely deep red, since moving them into the house. Obviously they didnt like it in the greenhouse, too cold i reckon.

    Apart from drying them any good ideas on what the best way to keep them, i usually buy them pickled but fancy doing this myself, what type of vinegar should be used? and can they be stored in olive oil?

      You can cut the end off and stuff them with cream cheese and steep them in good quality Olive oil. Lovely

        at least yours are going red!!! i have loads of chillis just none of them attempting to try to go red!!

          Yeah, nor mine. I imagine it's the lack of sun, but it could also be because I've lost the labels on my plants and can't be sure what colour they should actually be when ripe! I might be waiting sometime... :-)

            Mine are mostly a very light green, then straight to orange then red. None have gone to the dark green .

              Mine were green for ages but as soon as one started going red the rest very quickly followed.

                Mine are still green too, has to be the lack of sun! might move them into gh this weekend?

                  Remember that some chillies (especially Jalepeno's) can be eaten Green.

                  Last year I pickled a lot of mine last year, alongside with making chilli jam once they ripe.

                      I think ill try that one

                      Went away thursday in the caravan came back sunday thinking must have some red ones by now!! we had such a lovely sunny week!! went straight up to the green house.... not a red one in sight!!!! Realised i had peppers as well as chillis now though which was a a nice bonus as thought id only sown chillis!!!

                        Hi maximepaul!

                        That is a nice bonus! Can you remember what type of peppers you planted? Was it just the red and green ones, or some of the more exiting ones?

                        Just another version of the chilli and cheese thing! The other evening I picked my only 3 red wax type chilli's and slit them down the middle, I finely choped sone garlic and stuffed the garlic and some grated cheddar cheese and a little sprincle of dried coriander.
                        held it all together with cocktail sticks to stop the stuffing faling out while it was cooking
                        Then I drizled with a little olive oil and grilled till cheese had just melted. Chilli and cheese heaven! I recon goats cheese would be good as well!

                          No Idea!!! mixed seed packet i got free with gardening mag!!! one lot look like normal round peppers though and the others the long type still not red!!!
                          I might try your recipe but with green chillis seeing as ive got them coming out of my ears!!!!

                            Yeah green chilies would be good as well, I just could not resist my few red ones they were hot, yum, nice! It might be good to just cut the top off the chillis to stuff them, instead of slit it along the middle as I did! I did not think of that the other night doh!" silly me!

                            You must look strange with chillis coming out of your ears! just joking, with you!

                            Just a thought, I posted a couple of recipies on another thread the other week! You can use more of your chillis in them if you want! Somehow the post went in the wrong thread though. It was my first time posting a thread! It went on the weather and climet forum!

                            Do a search using irie jan and you will find it! The heading is:
                            (Chilli Heads Rice And Peas!) To go with it I put my favorite version of Jerk Chicken recipe, more chillis in that, as many as you can handle!

                              i stripped my plants last weekend they were all a dark red colour,i just need to know how to store then do you freeze them or put them in the fridge,coz i dont need to eat them all at once,
                              Any suggestions welcome
