    bit of a daft question

    i've just harvested my potatoes.. think they're first earlies (or maybe second, i've still not worked out what first and second earlies are )

    anyhoo, some of them are quite big, the size of a baking potato.. my question is can i use them as anything other than boiling them as new potatoes?

    can i use them for mash or chips?

      You can use them any way you like. It's just that some are better than others for the different uses. The link above will help, as also will Edwin Tuckers catalogue which has extensive lists of whats best for various methods of cooking. No hard and fast rules just suggestions. As far as first earlies, second , main crop descriptions are concerned it's about how long from planting to cropping. My earlies were being cropped in late May early June but my main crop are not being used yet. Probably dig up and store early next month. It does all depend on which variety you are using.

        We grow mostly waxy Charlottes which are really salad potatoes in the UK. Over here they're used for chips!
        I also jacket them..it's not the same as a King Edward...just as tasty though!
