  • Forced chicory ideas

    I've got some alien looking chicory being forced in the cupboard under the kitchen sink. But what can I do with it now? I can't see the children eating it in salads as it's a bit bitter.... Anyone have any good ideas for it?

    Gently steam it. Goes a little slimy but gets the bitterness out. Cheers, Tony.

      It isn't always bitter. I like it in a winter salad sliced with sliced little gems. The 2 marry well together.
      Also, steam then wrap each one with a slice of ham, pour over cheese sauce and bake.

        When I was young my mum would wrap it in bacon, grate cheese over it and bake it in the oven. Very nice with a creamy white sauce with herbs. Or she would slice it length-way in half, panfry some onion and pieces of bacon and then panfry the chicory in the juices of the bacon. Another option is the steam it and then use it in a quiche....
