  • Bake - polenta and swiss chard

    I have just made the best bake ever, and just wanted to note it down for future reference.

    Peel some spuds. Chop into bite sized bits and put into hot water to parboil.

    Fry an onion, chopped into big pieces, and a pepper, also chopped into big pieces and add the potatoes when parboiled. Chop some courgettes and add. Add loads of pepper.

    Put the above into a casserole dish and pop it in the hot oven.

    De-skin some tomatoes and cook them down. Add to the casserole dish.

    Fry some [already made up] polenta, in bite sized bits and add to the casserole dish.

    Make a cheese sauce, in the deskinned tomato pan. Fry some swiss chard in the dry potato/polenta pan. Add the swiss chard and pour over the cheese sauce. Change the oven to grill, and add some cheese to the top and cook for 10 mins.

    Lummox, it was good, and apart from the onion, cheese and polenta - all home grown.

              My apologies, Zaz, good job you're used to my sense of humour . It does actually sound deeelish.

                I've never tried Polenta so was wondering what it tastes like?

                        I use a mix of six scoops of compost three scoops of sand/grit and two scoops of perlite,the quantity is unimportant as long as the ratio is the same, if for seeds I use this mix, if I am potting on I add some blood, fish and bone, along with a small quantity of chicken manure pellets
