  • Beetroot and Horseradish soup

    A really good way to use up beetroot and delicious too:

    Cook the beetroot, you will need about 400g for 4 people

    Chop 1 large onion and sweat in 30g butter until cooked, about 15mins.

    Add the beetroot cut in chunks.

    Add 1ltr of chicken stock season with salt and pepper, bring to the boil and simmer for 10 mins.

    Liquidise until smooth

    Add 2 tblspns creamed horseradish or to taste,

    Serve with a spoonful of creme fraiche.

    Sounds great,will have to try.Thanks for sharing the recipe
    My beetroot soup is a bit different-grated beets with cubed potatoes,served with creme fraiche but not liquidised.
