  • Pumpkin marmalade

    This is Ralph Upton's recommended recipe from Oct 05 GYO. Forgive me if I have posted this before I can't find the thread.

    Makes 900g (2lb)

    1.8kg (4lb) pumpkin
    3 oranges
    1.8kg (4lb) sugar
    500ml (18 fl oz) water

    1 Slice oranges very finely and cut the pumpkin into small cubes. Place in separate saucepans.
    2 Cover the oranges with the water and the pumpkin with the sugar. Allow to stand for 24 hours.
    3 Bring the oranges to the boil and add the pumpkin and sugar. Boil slowly until tender. Pot and seal.

    Very easy. Absolutely delicious. Also goes well with ice cream, rice pudding etc. etc. etc.

    That sounds absolutely delish! May have to try that this week, after carving the two huge pumpkins we have ready for Halloween!

        How long does this keep for if put into sterelised jars?

          I've got some I made last year that is still in the wardrobe waiting to be opened and I've not long finished one jar that had been open in the fridge for a number of months.

            sorry if this is a daft question ...is that a 4lb pumpkin as it comes off the lottie or 4lb of pumpkin flesh and do you peel the oranges? marmalade does have peel in it sometimes.

              Hi HM - it's not daft. I used 4lb of pumpkin flesh and sliced the oranges whole - on the same peel basis.
