  • What to do with over-ripe peas

    Having been on holiday for 2 weeks; I've got a bowl full of peas that were picked a little past their best, most of them are quite 'chubby' and a little square in shape due to over-filling their pods.

    Any ideas what I can do with them? My mum suggested mushy peas, but as I remember the mushy peas she made me when I was little were grey and tasteless!

    Also, I've been advised that pea pods can be eaten, although I found them to be quite stringy, anyone got a recipe that uses them?

    I would have suggested saving them for seed, but you've already picked them have you?

      Great idea, I've got some pea soup on the boil now, will let you know how it turns out.

            I used the following recipe which was pretty darn tastey:

            INGREDIENTS
            2 tablespoons butter
            1 red onion
            2 cups chicken stock
            Handful of mint leaves
            3 cups fresh shelled green peas
            1 potato
            salt and pepper to taste
            3 tablespoons whipping cream (optional)

            DIRECTIONS
            Melt the butter in a heavy-bottomed saucepan over medium heat. Cook the onion until soft and translucent, about 3 minutes. Pour in the chicken stock, peas, mint and potato, season to taste with salt and pepper. Increase the heat to medium-high, bring to a boil, then reduce heat to low, cover, and simmer until the peas are tender, 12 to 18 minutes.
            Puree the peas in a blender or food processor in batches. Strain back into the saucepan, stir in the cream if using, and reheat. Season to taste with salt and pepper before serving.
