  • Shirley's slow-cooker chicken

Gonna post this recipe here so I can remember it later. Made this today and the family loved it so thought I would share with you all.

Rinse a chicken (whatever size you want so long as it will fit), put it in your slow cooker. Peel as much garlic as you like and throw in the pot. Peel and quarter onions - again to suit size of pot/appetites. Season chicken and cover with some streaky bacon rashers. Add a generous glass or so of white wine.

Cook on high for an hour or so and turn to low for 4 -6 hours or until you are ready to eat, removing the bacon at some point suitable to whatever you are doing.

We enjoyed it with boiled spuds and steamed veg but I think it would also be nice with couscous, rice or whatever. Spoon over the juices as they are in the pot. The onions do not taste at all like onion - younger son said they were 'lush' and he even ate a clove or three of garlic (both previously unheard of!!)

Feel free to adapt to what is in your fridge!!

I guess I can say it is 'my' recipe as I made it up (as far as I am aware). It could be printed in a book somewhere I suppose but I didn't find it in one! All that was left of the chicken was a bunch of bones so I think that means it tasted good!

Mmmm sounds great Shirley! I was just thinking that I would have to get the slow cooker out again too.

Last night for my birthday meal I had guinea fowl wrapped in Parma Ham (with roasted peppers, mashed sweet potato and a sweet but not too hot chilli sauce - had it before and just Sooooooooooo delicious!). So ......... I might try it with Parma Ham.

I love my slow cooker. Out in the States you can buy crockpot frozen meals - they cost a couple of quid and have everything in them prepared to chuck in the slow cooker - go out for the day - come home to a great meal. Pity we can't get the same thing over here!
