Default Salmon Recipes

Tried these at the weekend - great for making a small piece of salmon stretch for a miles! Serve with salad

Salmon and Tarragon Fishcakes - courtesy of Country Kitchen mag

550g potatoes
450g skinless salmon
big knob butter
2 good tsp mayo
1 tbsp chopped capers (optional)
2 tbsp fresh tarragon (2 tsp dried)
2 drops tabasco
breadcrumbs
  • Oven to mk 6
  • boil and mash potatoes
  • season fish wrap in foil parcel dotted with butter, bake for 15mins
  • buttery juices into mash, flake fish in bowl.
  • Combine mash, fish, mayo, capers, herbs and tobasco
  • divide into 12, roll in breadcrumbs (use spoons for this - it's sticky!) and chill.
  • bake at gas 7 for 20 mins or shallow fry

Oh, now that sounds rather scrummy!
Unfortunately, tonight I have already put my salmon on to cook.
NEXT WEEK, I'm going to do that honey bunny.

Sounds lovely Hazel. Maybe it could be done with different herbs too, dill is usually nice with salmon.

I like a bit of salmon and some smoked undyed haddock (and a few prawns) in with white fish in a fish pie. Mash on top, bit of cheese on top of that if you want to give the cat another goldfish.
Bit of salmon goes a long way here too and make the dish seem a bit more luxurious.
